5 Tips to Get Children to Eat their Vegetables

You have prepared some nice vegetables, knowing that this is something really healthy.

Research shows that vegetables, especially green leafy vegetables or wild edibles are  important to the well being of our children.

Veggies contain a wide spectrum of minerals your kids need for growth. They also include lots of vitamins and the essential fatty acids our human body can't produce itself.

It is essential to eat a high percentage of dark green leafy and other vegetables to access these nutrients and make sure that your child gets everything he/she needs.

This is even more important if you and your children live on a raw food diet.

You have put effort, love and time into this meal, and present it with pride on your kitchens table.

But your children do not eat a single bit of it!

So what is it? What is the trick?

Because we are really professionals when it comes down to veggies and children, we want to share our top tips here.

1. You have to eat them joyfully yourself.

If you want to change bad eating habits that you see in your children, then just sit there with them celebrating a salad yourself.

Do this with no talking. Just enjoy it yourself. If you do this for several days, your kids will feel a change.

They will notice what you do, become curious and ask. Let them try, but do not try to force them. This is a golden trick, but it really demands us to hold back and be patient.

2. Ask your kids what they like.

If you are doing a salad for example, add a very delicious dressing to it.

Play with it. Talk to them about their preferred tastes and give them the feeling, that you are fulfilling their wishes. Even in the end you give them veggies and salad together with their favorite dressing, at least you give them the feeling of being heard and asked.

3. Cover it up.

If you want to them to eat green veggies like kale, or spinach, or wild edibles, cover it in a smoothie. Start with a pure banana smoothie, so that your kids get familiar with it. Very gently and slowly add green to it.

Very little in the beginning, so that the color just changes slowly. But one day you will have a real green smoothie, and your kids will ask for it.

Once you have implemented in your kids believe that something green is still tasting sweet and delicious, you have already won. The key here is, make it all slowly!

You can also give them something sweet like dates, but roll these dates in a leaf of lettuce. Be with them when you give it to them. Make something exciting out of it.

4. Ask your Kids to tell you what their top favorite dish is.

Make it for them, but discuss beforehand that there will be a salad before that dish. If you give your kids the feeling of being part of the decision of what to eat, they will more likely participate and cooperate.

If you say something, (if you came to an agreement), please stick to it! This is important. Kids need to rely on your statements just as you want to rely on what has been admitted by them.

5. Go to the zoo. Watch wild animals.

Like I said in the beginning, kids are fascinated by wild animals. Read books about them. Let the facts speak for itself. This can have a big "a-ha" on your kids.

Watch the vegetarian, peaceful animals, together with your kids and get absorbed in the simple yet powerful truth of nature.

Czech Cucumber Salad

Today I'm trying out a new raw recipe. I found this in my Recipe book from a CSA Farm we used to have a subscription to.

Ingredients:

  • 2 Medium cucumbers
  • Salt
  • 1 Tbs oil
  • 1Tbs vinegar
  • Pepper to taste

Peel and slice cucumber very thin. Place in a bowl and sprinkle with salt. Mix, Cover bowl with inverted saucer and let sit for 20 – 30 minutes. Cucumbers will wilt. Drain juice. Add oil, vinegar, pepper and more salt if needed. Mix well and serve.

Serves 4

Persimmons: Steamed Persimmon Pudding

What are Persimmons:

Considered by many a winter delicacy, the bright orange persimmon gifts us once with its cheerful appearance and then again with its unique flavor. Ripen the persimmons at room temperature stem side down in a single layer. They will give to slight pressure when ready to use. Persimmons are very delicate, so handle them carefully.

 

Steamed Persimmon PuddingPersimmon

  • 1 cup persimmon puree
  • 2tsp baking soda
  • 1/2 cup softened butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 Tbs fresh lemon juice
  • 1Tbs rum
  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup walnut pieces
  • 1 cup raisins

Combine persimmon and baking soda; set aside. Cream together butter and sugar. Add eggs, lemon juice and rum; beat well. Stir in flour, cinnamon and salt. Beat in persimmon mixture, then stir in nuts and raisins. Pour into a greased 2-quart pudding mold with a lid (or use a coffee can with a plastic lid). Place covered mold on rack in large pot and fill with enough boiling water to come halfway up the sides of the mold. Cover pot and simmer 2 hours. Remove mold from pot and let sit for 5 minutes. Turn pudding out onto a rack. Serve warm with whipped cream, lemon sauce, or hard sauce.

Makes 8 servings
